The Level 1 Cake Decoration Award is designed for learners who are preparing to work in cake decoration or confectionery roles or wish to continue in further learning or training. It is designed to both develop and recognise achievement in cake decoration skills, knowledge and understanding in the context of confectionery operations.

This course will allow you to develop your skills to include working with sugar paste, royal icing, chocolate decoration, modelling, finishing gateaux and cupcakes. You will develop your cake decorating skills working with our industry experienced Bakery team of lecturers in the professionally equipped bakery.

This qualification has been recognised for enhancing vocation skills.

What will I do?

The qualification comprises of nine units.

Two mandatory units:

  • Demonstrate cake decoration skills in covering and decorating with sugar paste
  • Demonstrate cake decoration skills in making and piping royal icing

As well as seven optional units taken from the nine available:

  • Demonstrate cake decoration skills in coating and decorating with royal icing
  • Demonstrate cake decoration skills in coating and decorating with chocolate
  • Demonstrate cake decoration skills in modelling with pastes
  • Demonstrate cake decoration skills in finishing a gateau
  • Demonstrate cake decoration skills in finishing individual cupcakes
  • Demonstrate cake decoration skills in finishing individual tea fancies
  • Demonstrate cake decoration skills in finishing individual biscuits
  • Demonstrate cake decoration skills in making sugar flowers
  • Demonstrate cake decoration skills in design and creativity

Basic food safety will be delivered at the start of this course.

There are no formal qualifications for the Level 1 Cake Decoration Award.

During Cake Decoration Award Level 1 you will study at our Boston campus. The course will take a total of 14 weeks to complete starting on January 18th 2023.

The Level 1 Cake Decoration Award may be fully funded by the Adult Education Budget should you be eligible under the following criteria:

  • Be aged 19 or older on the 31st August
  • Be either unemployed and receiving JSA, ESA or Universal Credit (subject to criteria) OR be earning less than £17,374.50 (annual gross salary) a year

If you do not qualify for funding under the AEB budget this course will cost you £293.

Please note that all fees are subject to change.

You will be graded via the use of practical tests and assignments that are internally assessed as well as being internally and externally quality assured.

Completion of the Level 1 Cake Decoration Course can lead into the Level 2 certificate in Patisserie and confectionary. Alternatively into further education and training to develop knowledge and skills in related subject areas.

This course requires the wearing of a Chef jacket and trousers, to be paid for by the learner.
